Our Head Chef - Chef Paul
Chef Paul, our Executive Sous Chef, brings a wealth of international experience and creative flair to Bisteka’s kitchen. Originally from Ipoh, he refined his craft at Nobu, mastering the balance of precision and innovation. Today, he channels that expertise into modern European fusion cuisine, blending global techniques with local inspiration to create dishes that are refined, contemporary, and full of character.

Chef Paul approaches pastry as a form of art — guided by precision, creativity, and visual expression. To him, each dessert is not only to be tasted, but to be seen, felt, and experienced.
After graduating in Taiwan, he began his culinary journey in his hometown of Ipoh, before continuing his development in Penang. He later entered the world of fine dining at Nobu Kuala Lumpur, refining his craft as a pastry chef within a globally recognised culinary environment.
Today, he brings his artistry and technique to Johor Bahru, where he continues to evolve his style — combining structure with creativity, and flavour with visual storytelling.
At Bisteka, Chef Paul’s work reflects a balance between art and discipline, transforming pastry into an integral part of the overall dining experience.

Quiet in focus, yet vibrant beyond the kitchen, Chef Jonathan brings clarity and precision to every detail of his work.
With five years of experience in Monaco, he developed a strong foundation in technique-driven European cuisine. He later contributed to task force operations in Kuala Lumpur, expanding his adaptability and operational depth.
Offered opportunities abroad, he chose to be part of Bisteka — bringing his experience, discipline, and refined skillset to the team.
At Bisteka, his approach is defined by consistency, balance, and quiet confidence — ensuring every dish meets the highest standard.

Chef Vincent approaches cooking with discipline, intention, and respect for the craft. To him, food is never casual — it reflects the mindset, focus, and emotion of the one who creates it. A dish can only be as good as the state of the chef behind it.
His journey began in Kuala Lumpur, where he built his foundation in the kitchen before continuing his path through Singapore, refining both technique and perspective. Today, he returns to Johor — not as a beginning, but as a continuation — bringing with him the experiences, influences, and evolution gathered along the way.
At Bisteka, his cooking is rooted in modern European cuisine, yet shaped by a broader understanding of flavour, culture, and expression. Each plate is a reflection of precision, consistency, and a deep commitment to doing things the right way.
